Greek Strapatsada ......tomatoey, herby, cheesy scrambled eggs. Yum!


Serves 1


Ingredients: 2 eggs 1 tbsp olive oil 1 tomato 40g feta 1/2 tbsp dried oregano Salt and pepper Whole grain sourdough toasted


Method: 1. Grate tomato and whisk your eggs (keep separate). 2. Heat oil in frying pan and cook the tomatoes until it has thickened slightly 3. Stir through the oregano, seasoning and eggs with a wooden spoon until scrambled. 4. Add the feta and stir through 5. Top your toast with it and enjoy
