Herby garlic chicken thighs with potatoes and olives......family friendly and yummy.


Serves 4


Ingredients

Pack of chicken thighs

1 tbsp Extra virgin olive oil

10 Cherry tomatoes, halved

5 garlic cloves crushed

8 Green olives

4 carrots, grated and diced

120ml white wine

1 tbsp capers

4 potatoes

1 tsp dried oregano

Fresh or frozen parsley

salt and pepper


Method:

  1. Mix the garlic, herbs, salt and some oil in a small pot

  2. Brown the chicken thighs

  3. Put chicken on a plate and rub with prepared herbs

  4. Fry the potatoes and carrots in the remaining oil for approx 8 minutes

  5. Mix in the olives, white wine, tomatoes and capers and cook for one minute

  6. Add the chicken to the pot and top with a lid

  7. Cook for 25 minutes (or until juices run clear)

  8. Serve and enjoy!
